Fennel is a beautiful herb to have in the garden. Feathery and fern-like, it will flower and even the seeds are beneficial. It has a strong, licorice-like flavor. Use leaves in salads and fruit salads; fruit drinks and teas (flowers); pork, veal and fish dishes; stocks, sauces and stuffing; mayonnaise, flavored butters and salad dressings. Place dried stalks under grilled meat and fish. Seeds can be used as a spice in breads.
