Borage
Beautiful and versatile, Borage, also known as Starflower, is a great addition to the garden. It's harvested for its seeds, which are used to make borage oil. The leaves, flowers, and stalks are edible and taste similar to cucumber. Borage leaves can be used in salads, yogurt, cream cheese, or with shellfish. The flowers can be used as a garnish or dried herb in drinks and dishes. The leaves can also be steeped in hot water to make herbal tea. The oil is high in omega-6 fatty acids, and is often applied topically to the skin and hair. Those blue blooms are a delight, even if you don't want to do anything but look at them! Pollinators will come by and sample them too.
