Poblano | Hot Pepper

One of the most popular peppers, Poblanos have a smoky, earthy flavor with a hint of spice. They're similar to green bell peppers, but have more flavor and a little more kick. Ripe Poblanos are red and tend to be spicier than unripe, green peppers, but they're still considered mild, for a hot pepper. Cooking poblanos mellows them even more, They're often dried and sold as Ancho chiles, and add a peppery, slightly smoky flavor to dishes.
