Ghost | Hot Pepper

Before the Carolina Reaper came on the scene, the Ghost Pepper (also known as Bhut Jolokia) was considered for a short period of time as the hottest pepper on the earth. This is a heat that not many can handle, and extreme care should be taken when handling the fruit. Use gloves. This is good for craft hot sauces, ground up and used sparingly, and for the extreme pepperhead, eating raw. The amount of capsaicin puts this pepper in the stratosphere on the Scoville scale. These take a long time to grow, and like heat, and humidity.
